Spinach Artichoke Dip
1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) package frozen spinach, thawed, drained, and chopped
1 cup raw cheddar cheese, shredded
½ cup Parmesan cheese, grated
1 cup Greek yogurt
1 (8 ounce) block organic cream cheese, softened
2 cloves garlic, minced
Salt, to taste

Preheat oven to 375° F.
Mix together artichoke hearts, spinach, and cheeses.
Combine remaining ingredients and mix with spinach mixture.
Bake for 20-30 minutes. Serve with chips, crackers, or toasted bread.

Mini Mint Meatballs
1 pound ground chicken or turkey
1 small yellow onion, diced finely
1 tablespoon finely chopped ginger
½ cup chopped fresh mint
½ cup chopped fresh cilantro
1 large egg, beaten
½ teaspoon salt

Preheat oven to 350° F. Coat a large glass baking dish in coconut oil.
Combine all ingredients in a bowl and mix thoroughly. Shape into small, bite-sized balls (if needed, you may chill the mixture for 20 minutes to firm it up before shaping).
Place mini meatballs in prepared dish and bake for 15 minutes. Rotate each ball, and bake an additional 15 minutes. Remove from the oven, skewer with a toothpick, and serve! Tastes great dipped in Greek yogurt!

Nutty Pie
Pie Crust
2/3 heaping cup raw almonds
2 cups sprouted spelt flour
½ teaspoon salt
¼ teaspoon ground nutmeg
4 tablespoons butter
4 tablespoons coconut oil
2 large egg whites

Grind almonds to fine crumbs. Add flour, salt, and nutmeg, and mix. Add butter and coconut oil; mix. Add egg whites; mix. Press the dough into a 13×9 baking dish or two 9” pie plates, spreading the dough up the sides of the dish.

Filling
2 cups maple syrup
6 eggs
6 tablespoons melted butter
1 teaspoon vanilla
4 cups chopped nuts of your choice (pecans, walnuts, etc.)

Beat the eggs, add the maple syrup, butter, and vanilla, and mix well. Pour into prepared pie crust. Top with nuts. Bake at 375°F for 40-50 minutes.
