Nicole’s Healing Journey
Nicole started nutritional care in April 2019 for chronic fatigue, bloating, constipation, abdominal pain and nausea. Within a few weeks her digestive issues cleared and she suddenly had a new burst of positive energy! Nicole started working at the Well of Life Center in September 2020 as a Clinician in Training.

Here is a favorite recipe from Nicole’s kitchen:
Celery Root Mushroom Pasta
½ celery root peeled/ribboned
2 cups crimini mushroom
2 cups shiitake mushroom
2 cups filtered water
1 cup cashew milk
8 cloves garlic
2 sprigs thyme
2 tbsp EVOO
1 Tbsp nutritional yeast
1 Tbsp salt
1 tsp pepper
- Slice and peel celery into noodles.
- Soak noodles in ice water.
- Sauté 1 cup crimini, 1 cup shiitake, 2 chopped shallots, 4 chopped garlic cloves, thyme.
- Add cashew milk, 1 cup water, nutritional yeast, salt and pepper.
- Reduce on medium to high then blend sauce on high.
- Sauté rest of mushrooms.
- Add rest of garlic and shallot.
- Add noodles.
- Add rest of water.
- Bring to a boil.
- Strain and add sauce and pasta together in a pan and reduce for 3 minutes.
